Moving Madness

A personal note & update from me:

Where have I been and what have I been up to? Sorry to have been gone for so long! I have missed writing and sharing! Well, I’ve been in a whirlwind of boxes, packing,  and moving, while at the same time dog/house sitting for a friend for a week, while he was lounging on a beach in Mexico [without me]! HA! Plus, going to work and doing online health classes (4-6 hours per week). Trust me, it’s been very busy and not so much fun! However, I have had a good friend help me and also hired a couple of guys to do the heavy lifting! I am almost done. Just need to finalize a few things and get paintings up on the walls. The best part is that I now have a permanent space from where to teach the Food for Life Classes and a launching pad for my own holistic health counseling business! I’m very excited about that! And now I have a week off for spring break where I plan to complete two large abstract paintings. One day, I’ll post  some of my work on here. My life is not just about plant-based and healthy eating/living – I teach fine art for a living and abstract art is one art form that I not only love to execute, but also love to admire the works of others! If you happen to have a favorite abstract artist, please do share!

Keep it simple

If you’re moving and/or feeling overwhelmed with with work, like what I’ve just gone through, simple meals are key! One evening I cooked fingerling potatoes, asparagus and broccoli. Obviously, I have also gone out to eat a lot in the midst of this moving madness. At one fabulous new restaurant in my city,  I had wraps with fingerling potatoes, onion and kale – it was perfectly done! Another wrap had brussels sprouts and other goodies. So Yummy! These could be recreated at home, but when you’re moving, having another cook for you or bring you a meal is such a treat! (I’ll be going back and taking pictures over spring break, so you can see!) Bean dishes are also a good choice when you’re moving or simply making a large pot of soup! All right, sorry for the delay! I’m excited to start writing again!

Nice to hear what you are up to & to find out that you are an artist ( I never read your About Bio) I enjoy your Blog & now reading about your new space & business endeavors, I’m inspired to keep moving forward toward similar goals that I’ve set for myself. Taking online workshops, developing the skills that I have, I have to believe will get me to where I’m going. I’m so happy that I’m Vegan since it’s been my stepping stone in reshaping my life.I don’t always make the time to catch up on my favorite Blogs & when I do “check-in” it’s usually perfect timing for me…the post will be exactly what I needed to read at the moment..except that now, all I can think about is cooking & eating because all of the food you described sounds so delicious!

    • Thank you, Helene! Glad to have inspired you to keep moving forward. Some days I don’t think that things are happening as fast or as quickly as I would like but then I can hear my mother’s voice saying, “Rome wasn’t built in one day, Nina!” So I’m saying that to you! You will get there if you work towards it and keep a clear vision of what you want! I’m a huge Dr. Wayne Dyer fan – reading or listening to his books always inspires me and keeps me on track!
