I don’t know about you, but I don’t always have time to be in the kitchen, especially after a day at work for more than ten hours. So what do I do to stay healthy “on the go”? Well, today I wanted to share with you some easy dinner or lunch ideas that I eat on a regular basis when I’m too tired or not in the mood to cook. First up is the veggie burrito from a mobile stand. I simply ask them not to add any cheese! “Sin queso, por favor!”

The burrito is pretty big, so I’ve been asking them cut it in half. Then I have the other half for lunch the next day! My next favorite take-out plant-based meal is Veggie Pho or simply ask for “Vegan Pho”. This is a lot of food as well, even for just a regular size. I always ask for more vegetables than tofu when ordering this meal!

Bean sprouts and basil, plus added spices can be added to the Pho after the broth. I prefer not to use the things in the small tubs, not only because I’m not sure what it is or how much salt it contains, but I find that the broth is flavorful enough as it is. I will add the bean sprouts, basil & lime.
Next up is a quick veggie lunch idea that I make at home, so I have something ready to eat or take with me for lunch.
Quick Veg Lunch
For this lunch, I have bought a bag of organic mixed greens and then simply added tomatoes, carrots, beets and white kidney beans. For the dressing, I add either Paul Newman‘s Lite Italian or Trader Joe’s Orange Muscat Champagne Vinegar. Soup is always another option! I’m lucky because close to where I live is a wonderful soup shop with many different vegan options on their menu.

But what if I’ve had a big lunch and I’m not particularly hungry for dinner? Do I always eat a meal for dinner? Not always. If I’m having one of those days, I’ll stop at my local health food store and order one of these magic green drinks!
Green Giant Juice
Yup, that’s really what it’s called, “Green Giant”! This juice contains apple, celery, kale, cucumber and parsley! At the health food store, I also sometimes order a large bowl of steamed veggies over brown rice or falafel in a pita wrap with lettuce, tomato and onion to go. I hope this gives you some easy healthy ideas of what to do for when you’re on the go!
