Breakfast is a must at my house and I recently discovered Tofu yogurt from Lindsay Nixon‘s book, Everyday Happy Herbivore. I have made several different versions of this recipe, so I will share some suggestions, but I’m certain that you can come up with a variety of your own that will fit your particular taste buds! This is such an easy and healthy breakfast to put together in a matter of no time!
Tofu Yogurt with granola and berries
Ingredients:

2 packs of Mori-Nu Silken Tofu
-
2 cold bananas (refrigerate before using)

1 tbsp organic Agave (optional)
This is the brand that I prefer!
Optional:
Add whatever kind of fresh fruit you would like. When peaches were in season, I’d add a peach. Add your favorite granola!
