Kickin’ Kale Salad

In a hurry and need an easy tasty kale salad with a bit of a kick?

Try this one! I came up with it today. I hope you’ll like it!

IMG_0372Nina’s Kickin’ Kale Salad

Ingredients

A bunch of kale leaves, washed, de-stemmed, and chopped

2 large carrots chopped

1/2 red small onion finely chopped

1/2 Red or orange bell pepper chopped

1 avocado mashed into the kale

A handful of Quinoa and Black Bean infused Tortilla Chips crushed & mixed into salad (Trader Joe’s Brand or other)

2 or 3 tablespoons of Organic Tomatillo & Roasted Yellow Chili Salsa (Trader Joe’s Brand or other)

Optional:

Add your favorite bean to this dish and you’ve got a winner.

Also, add a handful of small organic cherry tomatoes for a sweeter taste.

Instructions

  1. Put all of the ingredients in a bowl and toss.

  2. Adjust the flavor by adding more salsa or the optional items.

  3. Bon Appetit!
