Urban Vegan Veggie Delight


Last night I made up the following dish. You will need a good sized pan with a lid. I’d like to add that it is worth investing in a good quality pan rather than buy a bunch of cheap cookware, most of which you’re probably not going to use anyway. I love the large All-Clad pan with lid that I purchased three years ago! It has been worth every single penny!

First, saute an onion with as much or as little garlic as you would like (I like a lot!) in some vegetable broth. Sorry, I did not measure the exact amount, but you want to make sure that the broth covers the pan so that it doesn’t stick. Let it saute for about five minutes or until the onions are translucent.

I had pre-cut the following:

2 – 3 small sweet potatoes sliced 

1 large head of broccoli in bite sized pieces

3 carrots sliced

4 celery sliced

1 red & 1 orange bell pepper in slices


1 head of Kale

After the onion and garlic was ready, I added the sliced sweet potatoes and carrots.

The sweet potatoes and the carrots need to cook for about five minutes or more. At this point you can add some (2-3 tablespoon) Organic Worcestershire Sauce (I use Annie’s Naturals) and a teaspoon of Roasted Red Chili Paste (make sure it doesn’t contain fish products). After that add the rest of the ingredients, except the broccoli. You don’t want to overcook it! Also add extra veggie broth, but not so much that it turns into soup! (About 3/4 cup of total vegetable broth). Finally, add the kale to the top of the heap and keep the lid on! Check on it after three – four minutes. Mix in the kale if it isn’t softening!

Since I cooked for a family of six and there was only me, this was also my dinner tonight and it was just as delicious today heated as it was last night!  It’s a simple, easy and healthy recipe! Enjoy!
