How I became fat on the American Diet

Before the film “Supersize me” and knowledge of the SAD (Standard American Diet), I supersized myself at the age of 18! I had only planned to stay in the United States for three months, but had fallen in love and it turned into six months. During my stay, I stayed with my aunt & uncle, who regularly frequented McDonald’s & other fast food restaurants and because I lived with them and helped them out in their shop, I also went to lunch with them regularly. My uncle loved to say about McDonalds, “Welcome to the Golden Arches anyone can be a member!”

After merely three months in this country I had gained 20-25 pounds, which is a lot on my otherwise 5’7 skinnier frame that was used to exercising daily. Not only did I gain fat on fast food, but had also discovered American ice cream and was watching more television and my cousins introduced me to popular American films that I had missed, such as “Pretty In Pink” and “Ferris Bueller’s Day Off”…I believe this is how my American accent got developed! As far as exercise, I’d bicycle some days to my uncle’s business, but for the most part I’d catch a ride with them, so not a lot of exercise. I quickly became lethargic and didn’t feel like doing much. I was tired all the time and uncomfortable in my own skin! Here’s a photo of me from this time.

However, after the six months, I had to go home again. As soon as I returned home I was determined to loose the extra weight after my mother had made a comment about how large I felt when she first hugged me coming off the plane…She now doesn’t recall this, but will say, “That was just baby fat!” I can promise you that it was NOT!

I went back to a standard Danish diet, which consisted of Danish rugbrød (ryebread), potatoes, vegetables and small portions of meat. I stayed completely away from dairy products. Also, I was living with my mother, who lived on the fifth floor and there was no elevator, so my daily exercise consisted of going up and down those stairs, bicycling around the city, and lots of walking. I’d probably also go swimming once in a while. After about three to four months, I lost all the weight and then I returned to the United States again.

My boyfriend back in the States, whom I had fallen in love with, happened to be a cameraman and worked, not only on movies, but also on commercials. I went with him on one of these commercials just to watch him work, which happened to be a commercial for Nissan cars. When the director saw me, he yelled, “Get her in a bathing suit!” This turned, over time, into six paid Nissan commercials where I worked with the other models. It was a fun experience for someone who had just gone from being “the chubby one” – hiding in large skirts to running around in a miniskirt on a set. I wish that I could say that I stayed this way, but that wouldn’t be the truth! I have over the years gone up and down in weight. Even back to being 20 pounds heavier! I am now past forty and still as slim as I was at 19, but in better physical shape & health! I often hear people using their age as an excuse, especially if they are past forty, but this is one excuse that I do not buy! I know you can loose the weight no matter how old you are because I have done so myself! However, you have to educate yourself on proper nutrition and make the necessary changes! Most people guess my age to be somewhere in my thirties, and although age isn’t that important to me, I personally have never felt better!

I have over the years gained and lost weight due to the Standard American Diet, however, learning about a plant-based vegan diet, plus following the advice and recommendations of Dr. Esselstyn, Dr. Campbell, Dr. Barnard, Dr. McDougall and nutritionist Jeff Novick has made all the difference! There’s no going back to being that lethargic & fat 18 year old me!

Here’s what I look like now as a whole foods plant-strong vegan…and I am now in my forties! A friend who has seen me in my “birthday suit” has told me that I have the body of a 17 year-old. Personally, it is not so much about how I look as much as it is about how I feel. I’ve never felt better! Doesn’t it show?
