Plant Based Diet Solutions

Yesterday was one of those gorgeous summer days. I escaped downtown living to go to a friend’s house on an island right on the water. For dinner we decided to make bowtie pasta with roasted vegetables. It’s an easy dish to make after a day of relaxing in the sun, yet so incredibly delicious & healthy!


1 box bowtie pasta (16oz)


Pitted Kalamata Olives

Sundried Tomatoes

Pine Nuts

1 orange Sweet Pepper

Zucchini (sliced)

Green Onion

Garlic (thinly sliced)


1 1/2 Tbsp Olive Oil

Vegan cheese – “Veggie Shreds” – Parmesan, Mozzarella & Romano flavor
