Plant Based Diet Solutions

As much as I have come to love kale, I really enjoy red cabbage as well. In Denmark, we usually eat “rødkål”, as it is called there, cooked & sweetened during the winter & with holiday foods, but I have come to love it even more in its raw & natural state as a snack or mixed in with my salads. I believe that the natural state is best because all the nutrients are still in tact and not lost during cooking & heating it. However, I sometimes make a stir-fry with tofu where I add a cup of red cabbage to it. This morning, I came across this video by Dani Spies called “Cabbage 101” where she talks about the benefits and shows you how to cut it. Enjoy! Just click on “Cabbage 101” below to watch!
