Plant Based Diet Solutions

As much as I have come to love kale, I really enjoy red cabbage as well. In Denmark, we usually eat “rødkål”, as it is called there, cooked & sweetened during the winter & with holiday foods, but I have come to love it even more in its raw & natural state as a snack or mixed in with my salads. I believe that the natural state is best because all the nutrients are still in tact and not lost during cooking & heating it. However, I sometimes make a stir-fry with tofu where I add a cup of red cabbage to it.
